3/4 c butter | 3 eggs | |
2 1/2 c flour | 2 1/2 tsp baking powder | |
2 1/2 tsp soda | 1 tsp salt | |
2 tsp orange rind (optional) | 2 c. grated zucchini | |
1 c. nuts (optional) | 2 c. sugar | |
2 tsp vanilla | 1/2 c. cocoa | |
1/2 c. milk | 1 tsp cinnamon |
Cream butter, sugar, eggs and vanilla together. Sift together flour, cocoa, b.powder, soda, cinnamon and salt. Add to first mixture alternately w/milk and zucchini. Add orange rind and nuts. Bake at 350 degrees for 1 hour in a bundt or angel cake pan. (Loaf pans can be used, adjust for baking time, and test w/tooth pic.) NOTE: Grate zucchini (2 c. pkgs) and freeze. Then you can make during the winter too.
