The Super-Secret Recipe File: Chocolate zucchini bread

3/4 c butter       3 eggs
2 1/2 c flour       2 1/2 tsp baking powder
2 1/2 tsp soda       1 tsp salt
2 tsp orange rind (optional)       2 c. grated zucchini
1 c. nuts (optional)       2 c. sugar
2 tsp vanilla       1/2 c. cocoa
1/2 c. milk       1 tsp cinnamon

Cream butter, sugar, eggs and vanilla together. Sift together flour, cocoa, b.powder, soda, cinnamon and salt. Add to first mixture alternately w/milk and zucchini. Add orange rind and nuts. Bake at 350 degrees for 1 hour in a bundt or angel cake pan. (Loaf pans can be used, adjust for baking time, and test w/tooth pic.) NOTE: Grate zucchini (2 c. pkgs) and freeze. Then you can make during the winter too.
