The Super-Secret Recipe File: Cool strawberry pie

This is an easy summer pie. And a winter pie. And a whenever-the-hell-ya-want pie. You could also use the cornstarch/sugar/water base, add whatever flavor jello you want, and have a nice sauce for ice cream or plain cake. Or filling for donuts. Or something unbearably sugary to slurp down while locked in the bathroom PMS'ing.... [snicker]

Bake a 9-inch pie shell according to package directions. Or use a graham cracker crust, or don't even both with the pie shell. Your call. Sometimes I use a deep-dish shell -- which holds pretty much all of it, and sometimes I use a shallow shell and eat the rest of the filling....

Combine 1 1/2 cups sugar and 1/4 cup cornstarch in a saucepan. Gradually add 1 1/2 cups water. Cook over medium heat until it's pretty much clear and starting to bubble. DO NOT OVERCOOK! The cornstarch stops thickening if it's overcooked!

Add one four-serving package of strawberry jello and let cool completely.

Mix in about a quart of fresh strawbs, cut in half (or however you want to cut 'em. Me, I cut 'em smaller -- I don't like wrestling with my food.) and pour the whole mess (or as much as will fit) into the pie shell. Put it in the fridge to cool completely.

Top with a package of Dream Whip (whipped, of course. duh.) or Kewl Whipp-type topping.
