1 container chicken liver | 3/4 stick of butter | |
1/2 chopped onion | 1 hardboiled egg | |
salt and pepper to taste |
Melt the butter in a skillet on a medium heat.
Cook onions a couple of minutes and then add the chicken liver (it's quicker to cook these if you cut them up a little before going in the pan....yes, they look nasty..but I promise, they're already dead.)
When the liver is cooked thoroughly, remove from heat and let cool just a little so it isn't steaming. (just a few minutes)
Put the contents of the skillet and a cut up hard boiled egg into a food processor with a bit of salt and pepper (easy on the pepper) and pulse til it's all of a fairly smooth consistency. (not too smooth, you aren't looking for a puree).
Empty that all into a bowl, stick it in the fridge and chill thoroughly - a couple of hours at least.
These are good with a very plain cracker like Carr's (Ritz are definitely too soft).
