I got this recipe from Sunset magazine, and decided to try it out one day with about 2 pounds of freshly picked blackberries. Deeeeelicious! I use it on everything now--chicken, beef, pork, etc. Not just for ribs anymore...
1 1/4 cups blackberries (frozen or fresh | 1/4 cup catsup | |
1/4 cup honey | 1/4 cup firmly packed brown sugar | |
1/4 cup minced fresh ginger | 1 tsp pepper | |
( i used the powdered kind and | 1/2 tsp salt (optional) | |
didn't have a problem) | 1-2 (or more) teaspoons hot sauce to taste |
In a food processor, whirl the berries til they are pureed. Add hot sauce to taste. Pour into a 1 quart glass measure. Cover loosely with microwave safe plastic wrap, leaving vents for steam. Cook in a microwave at full power, stirring occasionally until berry mix is reduced to 1 1/3 cups, about 8 minutes. Use as needed.
Note: This stuff freezes well, too.
[Clara's note: I asked Shavon about how much powdered ginger to use, and she replied insouciantly, "A quarter cup, I guess." One could almsot see the shrug.... Measure at your own risk!]
