|3/4 c butter||3 eggs|
|2 1/2 c flour||2 1/2 tsp baking powder|
|2 1/2 tsp soda||1 tsp salt|
|2 tsp orange rind (optional)||2 c. grated zucchini|
|1 c. nuts (optional)||2 c. sugar|
|2 tsp vanilla||1/2 c. cocoa|
|1/2 c. milk||1 tsp cinnamon|
Cream butter, sugar, eggs and vanilla together. Sift together flour, cocoa, b.powder, soda, cinnamon and salt. Add to first mixture alternately w/milk and zucchini. Add orange rind and nuts. Bake at 350 degrees for 1 hour in a bundt or angel cake pan. (Loaf pans can be used, adjust for baking time, and test w/tooth pic.) NOTE: Grate zucchini (2 c. pkgs) and freeze. Then you can make during the winter too.
