The Super-Secret Recipe File: Miss Lexie's Pineapple Casserole

Here's another one from "The Sweet Potato Queen's Book of Love". This might go under the "Would I give you something nasty?" category, since it has pineapple, crackers, and cheese, of all things. Once again, double or triple this one.

1 20 oz can of chunky pineapple,sweetened or unsweetened, with juice       1/2 cup sugar
3 tablespoons of flour*       1 cup of sharp grated cheese
1 stick of butter       1/2 cup of Ritz Cracker crumbs

Save three tablespoons of the pineapple juice; drain the rest. Mix the juice and pineapple with the sugar and the flour. Add the cheese, stir well, and pour everything into a greased casserole dish. Melt the butter and mix with a the Ritz cracker crumbs, and pour over the casserole. Bake at 350 degrees for 20 to 30 minutes.
