Seeing as there is WAY more than enough sweet stuff...I thought I'd add something with a little spice!
you will need dry or wet jerk spice
6-8 pieces of chicken (thighs or legs or 2 whole breasts if you don't like dark...works best with legs/thighs)
1 medium onion (diced)
2 table spoons of worchestire sauce/soya sauce
2 teaspoons of lemon juice
optional: 2 medium to large pototoes quartered
now you can all trot over to your local grocery store..and pick up jerk spice..preferably the dry type..cause other wise your gonna be wearin rubber gloves and workin it!
now you haul out that roaster pan..or 8x8 glass dish...and layer one medium or two small onions..in the bottom..diced....
now you simply put..(on average I do) 6-8 chicken legs ..or ditto boneless chicken thighs...now keep the skin on..cause other wise it gets dry...you can always peel it off before you eat it..if your one of those low fat campers..
now you have placed the chicken over the onions..you get some worchestire (i dont recall the correct spelling) sauce..or soya sauce and sprinkle it over all the chicken turning it around with a spoon..to cover all sides..about 2 tablespoons worth..and two teaspoons of lemon juice..
now for the jerk spice..if you got the dry...you take two tablespoons (highly spicy)ortwo teaspoons (mildly spicy)or one teaspoon (okay try it)(now if you got the wet..get your gloves on..and roll it around with your fingers until the chicken is covered...same amount applies as the dry...and i mean gloves cause if you get it on your hands..it stays there for like days..and god help you if you wipe your eyes and forget!)and sprinkle it over the chicken..turning it so everything has some spice on it..cover it.with plastic wrap..or the lid..and put in fridge..for at least 3 hours...to marinate...
you can add two peeled quartered medium to large potatoes this gives an addition spice out break.just before you pop it into the oven
then you bake in the oven at 375 degrees until chicken is cooked usually 45 to an hour depending on elevation etc..(who knew elevator adjusts the cooking time...anyway...).
Served on a plain bed of basmati rice its purrfect!
