|1 pound pasta, any variety||1 tablespoon olive oil|
|1/2 cup chopped red onion||2 cloves crushed garlic|
|1 pound stir-fry chicken strips||1/2 cup white wine|
|2 teaspoons dried oregano||1 (14 ounce) can marinated artichoke hearts|
|1 large tomato, chopped||1/2 cup greek olives, chopped|
|1 cup crumbled feta cheese||2 tablespoons lemon juice|
|salt and pepper to taste|
Prepare pasta according to directions on box. Drain and place in large bowl.
Meanwhile, sauté the onion and garlic in the olive oil. Stir in the chicken and cook over medium heat until chicken is done. Add the white wine, artichokes, and oregano and simmer until alcohol is cooked off (approximately 15 minutes).
Add the chicken mixture, tomato, olives, and feta cheese to the pasta. Drizzle with the lemon juice and mix well.
I made this for our first Valentine's Day together. Good with red wine.
